Gluten Free Banana Chocolate Chip Muffins

If life gives you, a little past ripe, bananas make banana bread, or in my case gluten free banana chocolate chip walnut muffins. Say that 10 times quick. My dad saw the slightly more than ripe bananas sitting in our fruit basket and asked if I could make some banana bread. I decided to make muffins instead. I searched for a recipe and used this one below from Pinterest, but I decided to add some walnuts for crunch.

There are a few gluten free flours I use. I had Bob's Red Mill 1 to 1 Gluten Free Baking Flour on hand, but my absolute favorite is Cup4Cup Gluten Free flour.

My dad was diagnosed with Celiac's disease a few years back, so I've had a few years of testing out different gluten free flours. Theses two are my top two favorites that are great for baking desserts like cakes, cupcakes, muffins, and even crepes! My dad and kiddos absolutely loved the muffins. If you decide to make these, let me know what you think of the recipe. Enjoy!
